Some pages had come loose when I flipped through the old pages of my recipe notebook and here I found the recipe my sister (Danda) had requested.
Nutty Fruit Cookies
Ingredients:
2 cups sifted all-purpose flour
1/4 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
¾ cup butter or margarine
1 cup granulated sugar
1 well-beaten egg
1 tsp vanilla
½ cup cashew nut , finely chopped
½ cup raisins
1. Preheat oven to 400 degree F
2. Sift flour , baking powder, soda, cinnamon & salt
3. Cream butter till fluffy
4. Add sugar little by little & continue creaming
5. Add egg and vanilla
6. Blend well
7. Add dry ingredients. Mix until smooth
8. Fold in pineapple, nuts, raisins
9. Drop mixture by teaspoon full on ungreased cookie sheet
10. Bake for 8-10 minutes or till done
11. Makes 3 dozen cookies
My youngest son just had their JS prom last night. He got home with one of the widest smile I’ve ever seen so I figured he really enjoyed the affair. It was pretty late when I came to pick him up and since I was getting drowsy, I decided I do the grilling the next day. It’s always a welcome treat for mothers to be given a blow-by-blow detailed account of what transpired last night. That’s what usually happens if you’re not there to personally witness the affair. At least, my son is going to have a memorable and happy thoughts in this second to the last program (his graduation from high-school, since he’s a senior already) of their school.
